EcoTapas workshop by Xavier Pellicer
Woki Organic Market, keen to bring organic farming closer to people and to promote its restaurant, is holding a three-session EcoTapas workshop led by Xavier Pellicer, the renowned chef from Can Fabes.
The second EcoTapas workshop took place yesterday, and I had the chance to go, almost by accident. It consisted of 9 tapas following the philosophy of biodynamic and energy-based cooking.
I can’t remember them all exactly, but here’s what I can recall; naturally, almost everything, if not everything, came from organic farming:
– Semolina couscous with cumin onions, caramelised pine nuts and an onion and date compote.
– A sliced bundle of endive leaves with spring onion inside, pan-roasted with salt and pepper and a touch of sake. With warm eucalyptus honey drizzled on top.
– Pressed cabbage with pork jowl and truffles, cured with vinegar, and a blueberry. (Like sauerkraut but without the fermentation.)
– Pizzettas with truffle and rocket.
– Pumpkin ravioli (the pumpkin gives them a sweet, fruity flavour) with pumpkin water and a hint of masala.
– Pear and gorgonzola ravioli with a Marsala wine reduction.
– Peas with salt cod tripe, truffle and black trumpet mushrooms.
– Wok-fried oyster mushrooms, soy and young garlic.
– Meat skewer with calçot (a type of Catalan spring onion) and a pepper, with a French sauce.
All the EcoTapas were spectacular, but my favourites were the peas and the pear and gorgonzola ravioli. Much to my regret, I didn’t try the pizzettas… but they smelled amazing.
They also served Valldolina wine, a 2010 Merlot Cabernet Sauvignon, plus beer and cava.
I’m glad there’s more and more awareness of organic farming in Spain. Although we’re the leading producer in Europe, we’re the ones who consume the least, because we export almost all of it (85% in 2010).
If you fancy it, there’s still time to sign up for the last EcoTapas workshop, which will be on 20 February at 7.30pm. Registration opens on the 14th: just send an email to info@wokimarket.com.
